Blueberry Pecan Pancake Muffins

These delicious little delectable were inspired by my beautiful cousin “PYT Askew”, one cold snowy day. The moment I saw them, I began salivating and knew I had to have them. I didn’t want to ask for her recipe. So, you know I went to work and created some shit. These are now my Jake’s FAVORITE breakfast and snack.

These Pancake Muffins are a GREAT “make ahead” breakfast or snack to take along with you anywhere! Make these nutritious little delicacies, instead of stopping to refuel on processed food like substances.

Remember, you are what you eat. So, don’t eat shit! Make These😊


Blueberry Pecan Pancake Mini Muffins

INGREDIENTS

  • Non-Stick Spray

  • 1 ½ cups Self - Rising flour

  • 1 Tsp salt

  • 3-4 Tblsp white sugar

  • 1 – Tblsp Cinnamon

  • 1 – Tblsp Nutmeg

  • 1 ¼ cups Soy Milk

  • Juice from a Fresh Whole Lemon

  • 1 - Tsp Vanilla Flavoring

  • 1 egg

  • ½ cup Pecans (chopped)(Optional)

  • 1-pint Blueberries


DIRECTIONS

  1. Preheat your oven to 350 degrees.

  2. Thoroughly mix ALL dry ingredients (including pecans) in a large mixing bowl.

  3. Pour in soy milk and lemon juice and mix.

  4. Beat egg into mixture.

  5. Spray muffin tin with non-stick spray.

  6. Pour a tablespoon of mixture into each cup.

  7. Top muffins with as many blueberries as you like (the more the better).

  8. Place muffins in oven and bake for 10-minutes.

  9. Serve with warm Maple Syrup or eat them just as they are, as a snack. They're great either way!

Mixture makes 2 batches of 24 mini pancake muffins or 2 batches of 12 regular sized pancake muffins. You can also opt to use the leftover mixture for regular pancakes tomorrow if you’d like.
